    • In a bowl, mix all your sauce ingredients. The soy sauce, lime juice, brown sugar, spices... just whisk it all together. The kitchen will already start to smell amazing.
    Layering in the Slow Cooker:

For the Jerk Chicken

  • 013 lbs bone-in, skin-on chicken thighs
  • 021/4 cup soy sauce (or tamari for gluten-free)
  • 031/4 cup fresh lime juice
  • 042 tablespoons olive oil

  • 061/4 cup jerk seasoning (store-bought or homemade)
  • 071 medium onion, roughly chopped
  • 084 cloves garlic, minced
  • 091-inch piece of ginger, grated
  • 101 Scotch bonnet or habanero pepper, seeded and minced (optional, for extra heat)
  • 111 teaspoon dried thyme
  • 121/2 teaspoon allspice
  • 131/2 teaspoon black pepper

Instructions

Step 01

Pat the chicken thighs completely dry with paper towels. This helps the skin get a nice color, even in the slow cooker.

Step 02

In a small bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, jerk seasoning, garlic, ginger, thyme, allspice, and black pepper. If you're using the Scotch bonnet pepper, add it here.
